If you are (unnecessarily) suspicious and nervous you can open a secondary account with your old phone company as a backup. Your old company will not tell you without asking, but if you enquire, you can open a "secondary account" with them. You have ??? as your long distance carrier. But, if you so desire, you can dial up your old company with an access code (you can program this into your phone to save keystrokes). You can always use this access code without needing to sign up for a secondary account. But, if you have a secondary account, you can maintain your special programs, like MCI Friends and Family etc. So If you don't get through to your third world country destination with NTC, you try MCI or AT&T. And, according to my experience they don't fare any better.
You might want to use your secondary account once in a while, because sometimes the off peak hours of the companies vary slightly.
